What is in Wine?

Wine is described as the second most complex fluid known, the first I assume is human blood.  Wine is quite complex, being a mixture of acids, sugars, alcohols, polyphenols and much more.  I have started to assemble this primer on the composition of wine and will add new material as time permits.  It helps me if you have questions, so send me a question via email and that will help direct the content of the information provided.
